Banana Cranberry Holiday Loaf

With the holiday season upon us it's officially the season of hosting, entertaining, and making the rounds with family and friends. Whether you are the one visiting or the one hosting, I have a recipe that is simple and delicious and takes less than fifteen minutes to make. And yes, you did read that right.

Here's what you'll need:

2 cups  whole wheat flour

3 Tbsp flaxseeds

1/2 tsp Epicure Sea Salt

1/4 tsp Epicure baking powder

1/2 teaspoon baking soda

1 tsp Epicure cinnamon

1/2 tsp Epicure ginger

2 over-ripe large bananas, mashed

1/4 cup canola oil

2/3 cup brown sugar

2 eggs

1 cup (8 oz) non-fat plain yogurt

1 tsp vanilla extract

1 1/2 cup fresh (or frozen) cranberries (sliced in half)

In a mixing bowl, place all of the dry ingredients (minus the sugar) together and mix. In a separate bowl add the other wet ingredients and the sugar together and mix together until combined. Then slowly add the wet to the dry ingredients and stir until combined (don't over mix). Transfer the mixture to your pan then you're ready!

As I find the holidays to be a busy season when I'm often crunched on time, I used the epicure steamer and popped this in the microwave for 6 minutes and it was done!! How ridiculous is that!? The silicone steamer is oven safe (up to 450) or you can use a regular pan but these days I'm all about convenience so the steamer is where it's at for me!  As the steamer is slightly smaller than a usual loaf pan this recipe made two loaves. 

If you don't use the steamer, bake in the oven at 350 for 50-60 minutes and you're done. And you've got a yummy holiday inspired recipe that you're sure to love!
