Citrus & Gorgonzola Crostini
What you'll need for this delightful treat:
- 2 Ruby Red Grapefruits
- Gorgonzola Cheese (Or your favorite blue cheese varietal)
- French Baguette
- Olive Oil
- Salt and Pepper
- Honey or Agave Nectar
Heat oven to 400 degrees. Slice your fresh baguette into 1/2" slices, drizzle with olive oil, and toast in oven for 8-10 minutes or until golden brown. Let cool while you dice your grapefruit into small segments (shown).
Once cooled spread on a healthy amount of blue cheese, grapefruit segments, salt and pepper and finish it off with a drizzle of honey or agave nectar.
Although my dinner guest was apprehensive at first, this perfectly balanced bite is a foodie favorite and vegetarian appy option.
