Easy Turkey Chili: Delish and Nutrish'

We all love cozy, comfort foods. The ones that remind us of our childhood and warm us up from the inside out. One of my all time faves is chili, ooey gooey good for the soul chili! The great news is, it doesn't have to be bad for you. My turkey chili recipe is loaded up with veggies and the lean protein of turkey and beans.

Easy Turkey Chili  (Serves 4-6)
You'll Need:
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can of diced tomatoes
- 3 roma tomatoes, chopped
- 3 carrots, shredded
- 1 (16 oz) can kidney beans (drained and rinsed)
- 1/2 green bell pepper, diced
- 1/4 jalapeño, seeded & diced (leave this bad boy out if you prefer mild, yawn.)
- 2 tablespoons chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- salt and pepper to taste

Directions:
Heat oil in pan. Add onion and garlic and cook until onion is translucent.
Add turkey and brown. Once browned, add shredded carrots. Shredding the carrots adds a bit of sweetness, Vitamin A & K, fibre, and next to no calories. I used rainbow carrots so don't fret when you see purple coming up...

Next I added 3 fresh tomatoes, canned diced tomatoes, kidney beans and green pepper. Stir to combine. Add jalapeño, chili powder, paprika, oregano, basil, cayenne, cumin, salt and pepper. Stir well. Bring to a low boil then turn to low and simmer for up to an hour. 

The final product looks a little different that your regular beef chili, but trust me, it's so full of flavour! Plus it's good for you so who cares if it looks a little different. I love the chili alone, but it's also delicious served on rice. 
Store extras in the freezer for lunches in a pinch.
